    Caraway Alpine is made with the same milk as Hawthorne
    Valley’s Aged Alpine and fortified with the added treat of
    organically grown caraway seeds.  Yes, those little cornels found
    on your rye bread add an extra layer of flavor to this wonderful
    cheese.  Many non-rye bread eaters have been converted to
    appreciate the robust flavor of  Hawthorne Valley’s organic
    caraway.

    KUNIK
    is our triple cream wheel made from goat's milk and jersey cow
    cream.  It has a white rind and a tangy buttery flavor. Delicious on
    its own or with fruit and crackers. A wonderful addition to any cheese
    plate.

    CRANE MOUNTAIN
    is a square block of semi-aged chevre made with 100% goat's milk
    and covered with a white rind. From it's feta-like youth through it's
    "runny" mid-life and back to a firm and wonderfully pungent maturity,
    Crane Mountain is excellent at every stage up to six months from
    when it is initially cellared. Packed 9 per case.

    GOAT’S MILK Chevre and FROMAGE BLANC in the following
    flavors:  Plain Fromage Blanc, Fromage Blanc with rosemary infusion,
    Honey Lavender Fromage Blanc Each are available in five ounce cups
    and the plain fromage blanc is available in one pound tubs.  Chevre
    available in the following flavors:  Plain, mixed Herb, Tellicherry

    True Farmstead Artisanal American Blue Cheese made on our farm in
    the Roquefort style with 100% sheep’s milk.  This luscious rindless
    wheel with abundant blue-gray veining in an off-white background is
    semifirm, moist, creamy and full of lasting flavors. Our Ewe’s Blue
    offers a combination of rich sheep’s milk, pleasant acidity and a
    sweet finish.  Approximately four-pound wheel is named in honor of

    HUDSON VALLEY CAMEMBERT:  Award-winning championship recipe
    is used to create these soft ripened cheeses made by combining our
    own sheep’s milk with our neighbor’s cow’s milk from his BGH-free

    black sheep logo. Ideal price point with more cheese in the

    Harpersfield cheese is a creamy yellow color with a slightly sour
    flavor. The cheeses are aged in the farm’s cave, and washed and
    brushed regularly for two months to form a crusty rind. This protects
    the smooth interior, and preserves the buttery flavor of the cheese.
    The firm-textured cheese is fruity with a spicy tinge. Its firmness
    makes it well suited for slicing, and it’s an excellent complement to
    robust beer and wine.  Passion, authenticity and taste – essential
    qualities of a farmstead cheese.  Approx 6 lb Wheel

    Columbia County in New York State.  Our county is part of the
    Hudson Valley and we are only a mile up the road from the river.  We
    buy all of our fruit locally or regionally because we are part of the
    Greenmarket in New York City. The Greenmarket was started 30
    years ago to ensure that small, regional farmers could stay in the
    business and city people would have fresh, locally grown food to
    buy.  Barry Benepe and Bob Lewis, founders of the Greenmarket,
    were very forward thinking men.

    Orders placed by 11 AM will be shipped later that afternoon,
    unless otherwise specified.  Any order placed after 11 AM will be
    shipped the following day, except for Thursday.  

    We use standard, insulated shippers with cold packs to maintain temperature.  Please
    open your package immediately upon arrival and store appropriately.  The cold packs
    can be refrozen and are yours to re-use.
